▪️Boil 3-4 cups of water in a pan. Add 100 gms Soya chunks. Boil for 4-5 minutes.
▪️Drain and squeeze out all the water from the soya chunks and keep aside.
▪️Peel and chop 4-5 medium sized potatoes into small cubes.
▪️Heat oil in a pan. Add potato cubes and fry until turns light golden. Take it out and keep aside.
▪️Fry the boiled soya chunks for 2 minutes. Take it out and keep aside.
▪️In the same pan, heat 2 tbsp oil. Add whole spices( 2 bay leaves, 2 inch cinnamon stick, 2 green cardamoms) 2 dried red chillies and 1 tsp cumin seeds. Stir for few seconds until they become fragrant.
▪️Add 1 cup grated onions. Saute until it turns golden brown.
▪️Add 1 tbsp ginger-garlic paste and saute until the raw smell goes away.
▪️Add 1/2 tsp turmeric powder, 1 tbsp red chili powder, 1/2 tsp coriander powder, 1 tsp cumin powder and saute them for a minute.
▪️Add 1 cup tomato puree and mix well.
▪️Add salt, 1/2 tbsp chicken masala, 1/2 tbsp kasuri methi and mix. Saute until the oil separates.
▪️Add fried soya chunks and potatoes. Mix everything well. Cook for 4-5 minutes.
▪️Add water and mix.
▪️Cover the lid and cook for 10 minutes.
▪️Garnish with some chopped cilantro.
▪️Serve hot with rice or roti.
