Lauki Chana Dal
Step-by-step recipe:
▪️Rinse and soak 1 cup chana dal for 2-3 hours. Drain and keep aside.
▪️Peel and cut lauki into small pieces. Rinse and keep aside.
▪️Add soaked chana dal and chopped lauki to a pressure cooker. Add salt, turmeric powder and water. Pressure cook for 2-3 whistles.
▪️Heat 2 tbsp oil in a pot.
▪️Add 2 bay leaves, 2 dried red chillies and 1 tsp cumin seeds. Let them sizzle.
▪️Add 2 chopped onions and sauté them until onions turn light golden brown.
▪️Add 1 tbsp ginger garlic paste and sauté until raw smell goes away.
▪️Add chopped green chillies, 1 tbsp red chilli powder, 1 tbsp coriander powder, 1 tsp roasted cumin powder, 1/2 tsp turmeric powder. Mix well and sauté for 2 minutes.
▪️Add 1 chopped tomato. Saute until it turns soft and mushy.
▪️Add salt and 1 tsp garam masala powder. Sauté for two minutes.
▪️Add the cooked dal and mix everything well.
▪️Cook for 4-5 minutes.
▪️Add some chopped coriander leaves and mix.
▪️Serve hot with rice, roti, poori or paratha.
