โช๏ธI have made this carrot kheer using coconut milk powder and granular jaggery
โช๏ธPreparing coconut milk directly from coconuts at home can be a time-consuming and arduous process. This easy-to-use coconut powder need only be reconstituted to make coconut milk that smells and tastes divine.
โช๏ธDuring winter, our body requires more energy to stay warm. Eating granular jaggery in winter (in moderation) provides the required calories to keep the body warm. It can also provide energy immediately whenever you feel tired.
Step-by-step recipe:
โช๏ธTake warm water in a bowl.
โช๏ธAdd 5 tbsp Rural Treasureโs coconut milk powder. Mix well and keep aside.
โช๏ธHeat 1 tbsp ghee in a pan.
โช๏ธAdd chopped dry fruits (cashew nuts, almonds and pistachios). Fry for few seconds.
โช๏ธAdd raisins and fry for few seconds.
โช๏ธRemove and keep aside.
โช๏ธAdd 1 tbsp ghee to the same pan.
โช๏ธAdd 2 cups of grated carrot.
โช๏ธFry until it turns fragrant.
โช๏ธPour the prepared coconut milk and mix.
โช๏ธCook until the coconut milk thickens.
โช๏ธAdd 10-12 saffron strands and mix.
โช๏ธCook for another 5 minutes.
โช๏ธAdd 2 tbsp jaggery. I have used Rural Treasureโs granular jaggery.
โช๏ธMix well and simmer for two minutes.
โช๏ธAdd 1 tsp cardamom powder and fried dry fruits. Mix everything well.
โช๏ธServe warm or cold.
