Palak Paneer

Palak Paneer!😍

Step-by-step recipe:
▪️Boil water in a pot, add 350 grams spinach leaves.
▪️Blanch the spinach leaves for 2 minutes.
▪️Take them out and put them in ice cold water. Keep aside.
▪️Heat 1 tbsp oil in a pan.
▪️Add 2 sliced onions, chopped ginger, chopped garlic and green chillies. Fry for 2 minutes.
▪️Add 2 sliced tomatoes, sauté until tomatoes turn mushy.
▪️Add this to the blanched spinach leaves.
▪️Transfer to a blender jar and blend to a smooth purée. Keep aside.
▪️Heat 2 tbsp oil in pan.
▪️Add whole spices and fry for few seconds until fragrant.
▪️Add 1 finely chopped onion. Sauté until onions turn golden brown.
▪️Add 1 tbsp red chilli powder, 1/2 tbsp coriander powder and 1/4 tsp turmeric powder. Sauté for 2 minutes.
▪️Add 1 tbsp kasuri methi. Sauté for a minute.
▪️Add the prepared purée. Mix everything well.
▪️Add 1/2 cup water and mix. Simmer the gravy for 5 minutes.
▪️Stir and add salt. Sauté for a minute.
▪️Add 2 tbsp cream and mix. Let it simmer for 2 minutes.
▪️Add paneer cubes.
▪️Add tadka.
For Tadka:
▪️Heat oil in a pan. Add 1 tsp cumin seeds and 4 dried red chillies. Let them sizzle. Add chopped garlic and chopped garlic and sauté until it turns golden brown. Add 1/2 tsp red chilli powder and mix.
▪️Add the tadka to Palak paneer.
▪️Serve hot with roti or paratha.
