No onion-garlic aloo ki sabji😍
Step-by-step recipe:
▪️Boil 4-5 potatoes. Cool completely. Peel the potatoes and roughly mash them into chunks. Keep aside.
▪️Heat oil in a pan.
▪️Add whole spices (1 bay leaf, 4 green cardamom, 4 cloves, 1 in cinnamon stick) and 2 dried red chillies.
▪️Add 1 tsp cumin seeds, 1/2 tsp fennel seeds and 1/2 tsp coriander seeds.
▪️Saute for few seconds until they turn aromatic.
▪️Add 1 tbsp grated ginger and 2 chopped green chillies. Sauté until raw smell goes away.
▪️Add 1 tbsp red chilli powder and sauté for a minute.
▪️Add 1/2 cup tomato purée and mix.
▪️Add salt and cook until oil separates.
▪️Add 1/4 tsp turmeric powder, 1 tsp coriander powder, 1/2 tsp cumin powder and 1 tsp garam masala powder. Mix everything well.
▪️Add water and sauté for 2-3 minutes.
▪️Add potatoes and stir for 2-3 minutes.
▪️Add water and mix. Let it boil.
▪️Add 1 tbsp kasuri methi and mix.
▪️Cook for 7-8 minutes, till it thickens slightly.
▪️Add some chopped coriander leaves and mix.
▪️Serve hot with poori.
