Step-by-step recipe:
▪️Heat 1/2 cup oil in a pan.
▪️Add 10-12 cashew nuts, 10-12 almonds and 10-12 pistachios. Fry for few seconds.
▪️Add 15-20 raisins and fry for few seconds.
▪️Remove and keep aside.
▪️In the same pan, add 1 diced potato, 1 sliced carrot. Fry for 5-6 minutes. Remove and keep aside.
▪️In the same pan, add 1/2 cup cauliflower florets. Fry for a minute. Add 1/2 cup chopped beans and fry for 2 minutes. Add 1/2 cup green peas and fry for a minute. Remove and keep aside.
▪️Add 100gm paneer cubes to the same pan. Fry till light golden from all the sides. Remove and keep aside.
▪️Heat 1 tbsp ghee in a pan.
▪️Add whole spices(1 bay leaf, 1 star anise, 1 inch cinnamon stick, 4 cloves, 4-5 black pepper, 4 green cardamoms) and 1/2 tsp shahi jeera. Fry for few seconds until fragrant.
▪️Add 2 cups of cooked rice and the fried vegetables. Gently mix everything.
▪️Add fried paneer and dry fruits. Add salt and 1/2 tbsp lemon juice. Gently mix everything well.
▪️Add saffron milk and fried onions.
▪️Cover and cook for 5 minutes in low heat.
▪️Gently fluff the rice.
▪️Serve hot with raita.
