Masala vegetable khichdi
▪️Take 1/2 cup rice and 1/2 cup moong dal. Wash them and soak in water for 10 minutes
▪️Put soaked rice and dal in a cooker, add 2 ½ cups of water and cook for two whistles.
▪️Heat a pan, add ghee.
▪️Add mustard seeds and cumin seeds, let them splutter.
▪️Add 1/2 tbsp chopped garlic, 1/2 tbsp chopped ginger, 2 green chillies and 2 dried red chillies. Sauté them until the raw smell goes away.
▪️Add 1/2 cup chopped onions and sauté for two minutes.
▪️Add diced potato and fry for two minutes.
▪️Add chopped beans, chopped carrots and green peas. Stir fry them.
▪️Add 1 chopped tomato and mix.
▪️Add salt, 1/4 tsp turmeric powder, 1/2 tsp red chilli powder and 1/2 tsp garam masala. Mix and cook for 2-3 minutes.
▪️Add water and give it a boil.
▪️Add the cooked rice and dal. Mix everything well and cook for 2-3 minutes.
▪️Add some chopped cilantro and desi ghee.
▪️Serve hot with dahi(yogurt), papad and achaar(pickle).
