Chicken Birria Tacos

3 lbs chicken breast
2 ancho
5-10 arbol
3 guajillo

1 large white onion
10 cloves garlic
1 Tbsp tomato paste
1 tomato
1 bay leaf
1 cinnamon stick
4 cloves
Submerge in water (don’t over do it)

2 tsp thyme
2 tsp black pepper
2 tsp oregano
1 tsp cumin
1 tsp coriander
1 Tbsp salt (or to taste)

Serve with

White onion
Cilantro
Oaxaca cheese
Tortilla of choice

This makes about 12-16 filling tacos (if using corn tortilla)
