Carrot Kheer

Carrot Kheer!!
▪️I have made this carrot kheer using coconut milk powder and granular jaggery
▪️Preparing coconut milk directly from coconuts at home can be a time-consuming and arduous process. This easy-to-use coconut powder need only be reconstituted to make coconut milk that smells and tastes divine.
▪️During winter, our body requires more energy to stay warm. Eating granular jaggery in winter (in moderation) provides the required calories to keep the body warm. It can also provide energy immediately whenever you feel tired.

Step-by-step recipe:

▪️Take warm water in a bowl.
▪️Add 5 tbsp Rural Treasure’s coconut milk powder. Mix well and keep aside.
▪️Heat 1 tbsp ghee in a pan.
▪️Add chopped dry fruits (cashew nuts, almonds and pistachios). Fry for few seconds.
▪️Add raisins and fry for few seconds.
▪️Remove and keep aside.
▪️Add 1 tbsp ghee to the same pan.
▪️Add 2 cups of grated carrot.
▪️Fry until it turns fragrant.
▪️Pour the prepared coconut milk and mix.
▪️Cook until the coconut milk thickens.
▪️Add 10-12 saffron strands and mix.
▪️Cook for another 5 minutes.
▪️Add 2 tbsp jaggery. I have used Rural Treasure’s granular jaggery.
▪️Mix well and simmer for two minutes.
▪️Add 1 tsp cardamom powder and fried dry fruits. Mix everything well.
▪️Serve warm or cold.
