Barbacoa Tacos 🥵
2 lbs Chuck
Salt to taste
5-6 cloves garlic
1 bay leaf
2 tsp cumin
2 tsp oregano
1 tsp peppercorns
3-4 New Mexico chilis (or Guajillo chiles)
4 cups beef stock
Salsa verde:
8 tomatillos
1 medium white onion
4-6 cloves garlic
3 jalapeños
1/4 cup of any stock
1 tsp cumin
1 tsp oregano
Bundle of cilantro
1/4 cup white vinegar
To make 16 tacos:
2 cups masa flour
1.5 cups water
Pinch of salt
Top with whatever cheese you like.
